CHAPTER · 01
The same pork, never the same taste.
Sansol builds its table around aged pork — belly and neck, chuck flap, doenjang-aged Maekjeok ribs and more. Every cut is prepared for its own texture and aroma, so a single sitting covers the whole range of what pork can taste like.

Sides from the mountains of Gangwon.
Grilled mountain deodeok brushed with omija sauce, a country doenjang stew simmered with Gangwon soybean paste, Gangwon-style buckwheat noodles reinterpreted the Sansol way — and highballs made with Inje omija and Chuncheon plum. The sides that complete the meat, prepared the way only Sansol would.
